You can download the 1.2.5 version here: http://www.mojang.com/2012/03/minecraft-1-2-5-prerelease/

Just go to your .minecraft\bin and replace the jar file with the one you downloaded. When you want to update to 1.3 just choose "force update" in the options menu when launching minecraft.

Yeah, it's illegal to download jars. If you need one get on google and say argh if you catch my drift. (Safest way is to get it from a friend though.)
