Those are mostly supplemental, if you're not planning to do any overclocking right off the bat they can probably wait until later. The case in your build also already has a 140mm fan and a 120mm fan, so that's plenty good for now. If you want to get more fans in the future, that case can take up to 5 more 140mm fans, so this case has the opportunity for some excellent airflow.

If I were to wait until summer to buy, what pieces would you consider getting at that point differently?

Depending on the cost of the gtx 760/gtx 760ti I would go with one of those. They will be more up to date and probably have better performance for the cost. Of course I could be wrong, so if you are planning to do that I would just wait and see.

Of course, you should keep in mind that early adapters usually get bitten in the ass by the things they buy quite quickly, even more so in the electronics category, and even more more so in the graphics card department. Even the 660 Ti's that came out in 2012 had issues for like, what, was it 10+ months? And those are still having issues, which have only recently begun to be resolved.

I know it sounds like a drag, but I'd at least wait a month or so to see what the major bugs that will come up are for these new 700 series cards, and just to see how they operate, and how effective they are compared to the 600 series. That way, you can make an informed decision about what card you really want, taking all factors into account.

Hm, well I got my 680 early last may just after it came out and I've had very little issues, so I guess it's just a matter of luck.

It appears that Nvidia just announced the GTX 650ti boost along with the gtx 770. From the specifications and benchmarks they provide, it has an even greater price to performance ratio than the gtx 660, as well as supporting SLI. If you wanted, you could run two GTX 650ti boosts in SLI to get even greater performance than the GTX 670, and it would only cost $300. Of course, it comes with some of the innate problems of SLI/crossfire, but this is still the best option in my opinion.
