I do believe that the definition of touch typing is to not look at the keyboard when you type and have it all memorized. And that's exactly what I do. You don't have to be taught that in school and like get a diploma for it...

Actually, you are looking at the keyboard. Try putting a piece of paper above your hands while you type. It'll become considerably harder.
