Here's my take on the new mechanics.
Minecraft is, at its core, a survival game. Therefore, any game mechanic that makes surviving more difficult for the player only enhances the game experience, as well as the overall challenge of the game. It is now a bit more intimidating to face enemies head-on, making the player strategize on ways to dispose of the threat without losing precious health; essentially, thinking "I need to do what I cam to survive" rather than "Look! A creeper! CHARGE!!!". Besides, if your hunger meter is above 90%, you automatically heal, so if you're full, you can run into combat and regenerate health without having to switch to a porkchop and back to your weapon.

I like Gecko's take on the situation myself.
But what most people are thinking, "I normally don't have pork or anything in the real game".
After playing 1.8 for the past two days I have figured out a few things.
1. Animals spawn in herds.
Finding a pig will most likely mean that there are quite a few close by.
Same goes with Cows, and Chickens. All a source of food.
2. If all possible take refuge in a NPC Village.
They have pre-built homes, and a farm with wheat already planted in it. Perfect place to start a base.
3. Going mining, Look for Melon seeds.
When you hit a Abandoned mine, you will find chest scattered throughout it. If you are lucky you will find a melon seed, treasure it and do as follows.
A = Water
B = Farmland (Ho'ed land)
C = Melon Seed on Farmland (Ho'ed land)
ABC

Doing that you will have two rows of Farmland, hopefully fertile with the water. When you plant the seed it will grow into a full sprout and most likely set there . Once the melon is grown, the melon will pop onto the Farmland next to where you planted the seed, that is now a full grown sprout, and you can harvest it. Once you harvest it you Full grown Sprout will stay and you will get a few melon Slices. Re-Hoe the land next to the sprout.
Take the Melon slices and put them in a Crafting table slot, and you will get seeds for every melon Slice. Rinse and Repeat.
Easy way to get food, as me and Spam have found out and Now have many,many stacks of Melon slices. Do this, and carry around a stack of melon slices, you will basically always have full health.
Downside is that you may get Poisoned by Melon slices sometimes, i have eaten over a stack of them and have yet to get poisoned.

Correction: Mobs have always spawned in herds, they are just much bigger now.
Also, where did you read that you can get poisoned by melon? Sauce?

Herp I types that at 3am, so some of it is wrong. I did meant to pit in tyere that the max animal cap was raised in a general area, just worded it wrong.
And the melon, I was told that by Spamm.
