There is actually a Minecraft version of this up, And i can honestly say it works very well.

I'd spectate. I would imagine a large number of spectators would come. Think about the court hearing in 2.0, the one I killed everybody at like 4 times. Tons of people came to watch someones hearing about stealing something useless.

I vote for simple arena fights. No food/potions, just armor and sword. Sure, short fights, but the betting would be the fun of it all.

Yeah, I would really like to see Hunger Games, but I think an arena fight would be easier within Revamped.
