I'm sure I'm not the only person really annoyed by this.
(Placing the torch caused the blocks to update removing the ores but until a block near them is altered they remain in that state so it is common that they don't appear as drastically as this situation and you mine into one before realizing.)

Agreed. I actually mined straight through both diamonds and gold while strip mining yesterday because I accepted the fate that all valuable ores are simply figments of my imagination - only to discover that real ores do exist.

Also all you have to do it punch the blocks in order for them to be updated.
